Pada jenis-jenis masakan tertentu sering digunakan alkohol seperti arak, ang ciu, wine, mirin dan sebagainya. Salah satu contohnya adalah pada masakan cina, jepang, juga pada pembuatan kue tart. Bahkan pada masakan lokal seperti nasi goreng sering ditambahkan arak. Oleh karena itu diperlukan alternatif pengganti khamr atau minuman memabukkan tersebut dalam masakan. Pengganti ini tentu saja tidak sama persis seperti menggunakan khamr, namun hanya menimbulkan rasa atau aroma yang mirip.

Ang Ciu : Alternatifnya adalah campuran kecap asin dan perasan jeruk limau

Mirin : Alternatifnya adalah jus anggur yang dicampur dengan perasan air jeruk lemon.

Red Wine : Alternatifnya adalah jus anggur, jus cranberry dan jus tomat.

Bourbon : Alternatifnya adalah ekstrak vanilla, jus cranberry atau jus anggur.

Brandy : Alternatifnya adalah sirup buah cerry atau selai cerry.

Muscat : Alternatifnya adalah jus anggur yang ditambah dengan air dan gula putih.

Vodka : Alternatifnya adalah sari buah apel atau jus anggur dicampur dengan perasan jeruk nipis.

White brandy : Alternatifnya adalah anggur, sari buah apel, kaldu sayuran maupun air biasa.

Apple Brandy : Alternatifnya adalah jus apel tanpa pemanis

Following is a general list of non-alcoholic substitutes that can be used when cooking with alcohol is simply not an option. Choose the option that best matches the flavor of the dish you are making:


Amaretto
 -  Non-Alcoholic almond extract. (Substitute 1/4 to 1/2 teaspoon almond extract for 2 tablespoons Amaretto.)

Anisette - Anise Italian soda syrup or fennel. Also use the herbs anise or fennel.

Beer - Chicken broth, beef broth, mushroom broth, white grape juice, ginger ale.

Bourbon - 1 1/2 to 2 teaspoons of non-alcoholic vanilla extract.

Converting Recipes to Metric Measures

The instructions and tables presented below will walk the reader through converting a recipe to metric measures. It is important to note that these conversions only work with U.S. recipes. Customary measures like cups, pints, quarts, and gallons mean different things in different countries. For example, if you try to convert a British or Australian recipe to metric using these instructions, it may flop.

Liquids (and Herbs and Spices)

Liquids can be converted to liters or milliliters with the following table. Small volumes (less than about 1 fluid ounce or 2 tablespoons) of ingredients such as salt, herbs, spices, baking powder, etc. should also be converted with this table. Do not use this table to convert other non-liquid ingredients.
